From mbg&#8217;s favorite healthy <strong><a href=\"http:\/\/lavyon.com\/\">breakfasts<\/a><\/strong> to plant-based alternatives, I&#8217;m always expanding my list of morning go-to&#8217;s\u2014especially when the dishes are healthful, straightforward, and uncomplicated.<\/p>\n<p style=\"text-align: justify;\">Now that we&#8217;re hosting again, I&#8217;ve been looking for meals that will serve a crowd without requiring too much fussy egg frying or pancake-flipping\u2014and this recipe from recipe creator and TikTok star Shereen Pavlides fits the bill.<\/p>\n<figure id=\"attachment_13288\" aria-describedby=\"caption-attachment-13288\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13288\" src=\"http:\/\/lavyon.com\/wp-content\/uploads\/2021\/08\/Photo-by-Brooke-Lark.jpg\" alt=\"Photo by Brooke Lark\" width=\"750\" height=\"500\" title=\"\" srcset=\"https:\/\/lavyon.com\/wp-content\/uploads\/2021\/08\/Photo-by-Brooke-Lark.jpg 750w, https:\/\/lavyon.com\/wp-content\/uploads\/2021\/08\/Photo-by-Brooke-Lark-150x100.jpg 150w, https:\/\/lavyon.com\/wp-content\/uploads\/2021\/08\/Photo-by-Brooke-Lark-300x200.jpg 300w, https:\/\/lavyon.com\/wp-content\/uploads\/2021\/08\/Photo-by-Brooke-Lark-696x464.jpg 696w\" sizes=\"auto, (max-width: 750px) 100vw, 750px\" \/><figcaption id=\"caption-attachment-13288\" class=\"wp-caption-text\">Photo by Brooke Lark<\/figcaption><\/figure>\n<p style=\"text-align: justify;\">It&#8217;s a recipe from her new book Cooking With Shereen From Scratch that mixes eggs with a variety of colorful summer vegetables and a touch of cheese and packs in a ton of excellent nutrients to get your day started strong. &#8220;This is a morning version of bri\u00e1m, a traditional summer vegetable meal,&#8221; she adds. &#8220;This is Greek!&#8221;<\/p>\n<p style=\"text-align: justify;\">The eggs and Kasseri are what distinguish this rendition from the original.&#8221;<\/p>\n<p style=\"text-align: justify;\">Kasseri is a sheep and goat milk cheese from Greece that may be purchased in the cheese department of certain markets, specialty shops, and online.&#8221;<\/p>\n<p style=\"text-align: justify;\">You&#8217;re going to start with a large number of vegetables (the greatest way to start a meal, in my opinion), which will then be roasted before the eggs and cheese are added at the end. &#8220;If you&#8217;re hosting, you may prepare the veggies up to 4 hours ahead of time, put them in a baking dish, cover with plastic wrap, and set aside at room temperature,&#8221; Pavlides adds. &#8220;When ready to serve, warm the veggies in the microwave until hot before adding the cheese and eggs and continuing to bake.&#8221;<\/p>\n<p style=\"text-align: justify;\">The ingredient list seems like a list of the finest summer finds at the farmer&#8217;s market, but they all fit well into a Mediterranean diet\u2014especially if you can source locally and organically.
