Everyone has an opinion about Guacamole, Mexico’s most famous avocado-based dip. Some, like us, prefer to keep things simple. We prefer to let the flavor of our avocados speak for themselves. Others go crazy with the add-ins: spices, tomatoes, and garlic, for example. If that’s your style, this guacamole is an excellent starting point. You are free to include whatever you want! Simply make sure you don’t forget the corn chips.

Is it possible to make guacamole in a food processor?

Of course! We prefer chunkier guacamole, which is why we like to mash everything by hand. If you prefer guacamole that is smooth, a food processor is ideal. If you want to retain some texture, pulse the mixture and check frequently to ensure it does not become too smooth.

Is it possible to make this guacamole ahead of time?

As with most avocado-based dishes, the fresher the better. If you wish to prepare the guacamole ahead of time, press a layer of plastic wrap directly on top of the dip to prevent oxidation and slow browning. Cover the dish with a lid and refrigerate for up to 2 days. To extend the shelf life of your sealed guacamole even further, you can freeze it for up to 3 months.

How can I accelerate the ripening of my avocados?

We’ve discovered that placing unripe avocados in a paper bag with an apple works wonders! Keep the paper bag closed at the top and at room temperature. They should feel significantly softer after 12 hours!

I’m not a fan of fresh jalapeos; what can I substitute?

If you’re not a fan of mucking around with fresh jalapeos (and we don’t blame you! ), this recipe is for you. Pickled jalapeos are an excellent substitute. If you prefer to omit the peppers entirely, a couple large pinches of crushed red pepper flakes or a couple teaspoons of your favorite hot sauce are both excellent ways to give your guac a kick.

    • 1/4 c. freshly chopped cilantro, plus more for garnish
    • Juice of 2 limes
    • 1/2 small white onion, finely chopped
    • 1 small jalapeño (seeded if you prefer less heat), minced
    • 1/2 tsp. kosher salt

Suggestions

    1. Combine avocados, lime juice, cilantro, onion, jalapeo, and salt in a large bowl.

    2. Stir, then turn the bowl slowly while running a fork through the avocados (this will ensure the mixture stays chunky). Season with additional salt if necessary once the mixture has reached the desired consistency. Before serving, garnish with additional cilantro.
