This Breakfast Inspired by the Mediterranean Is Packed With Nutrients

I’m not sure about you, but I’m a huge breakfast lover. From mbg’s favorite healthy breakfasts to plant-based alternatives, I’m always expanding my list of morning go-to’s—especially when the dishes are healthful, straightforward, and uncomplicated.

Now that we’re hosting again, I’ve been looking for meals that will serve a crowd without requiring too much fussy egg frying or pancake-flipping—and this recipe from recipe creator and TikTok star Shereen Pavlides fits the bill.

It’s a recipe from her new book Cooking With Shereen From Scratch that mixes eggs with a variety of colorful summer vegetables and a touch of cheese and packs in a ton of excellent nutrients to get your day started strong. “This is a morning version of briám, a traditional summer vegetable meal,” she adds. “This is Greek!”

The eggs and Kasseri are what distinguish this rendition from the original.”

Kasseri is a sheep and goat milk cheese from Greece that may be purchased in the cheese department of certain markets, specialty shops, and online.”

You’re going to start with a large number of vegetables (the greatest way to start a meal, in my opinion), which will then be roasted before the eggs and cheese are added at the end. “If you’re hosting, you may prepare the veggies up to 4 hours ahead of time, put them in a baking dish, cover with plastic wrap, and set aside at room temperature,” Pavlides adds. “When ready to serve, warm the veggies in the microwave until hot before adding the cheese and eggs and continuing to bake.”

The ingredient list seems like a list of the finest summer finds at the farmer’s market, but they all fit well into a Mediterranean diet—especially if you can source locally and organically. However, regardless of whatever vegetables you begin with, this Breakfast will be delicious.
