CONSUME & DRINK

Urban Farmer cultivates genuine, mutually beneficial connections with local and regional farmers, ranchers, butchers, fishers, and produce purveyors in order to obtain high-quality products ethically. The restaurant’s chef-driven philosophy allows for flexibility, resulting in a more modern steakhouse experience where the steak is great, but the rest of the menu is most emphatically not an afterthought. While Urban Farmer distributes beloved recipes across kitchens, each site searches for indigenous crop varietals and local collaborators to bring them to life, and a large portion of the menu is developed by the local Executive Chef, as is the case in Nashville. Under the leadership of Executive Chef Hector Campos, who has over two decades of experience in casual and fine dining restaurants, as well as prestigious five-star luxury hotels and resorts throughout the world, the Urban Farmer Nashville team is currently developing new relationships in the Middle Tennessee region with partners from local farmer’s markets and other Nashville area businesses.

Hutton Hotel New York Steak Tasting

The Urban Farmer Nashville menu will feature classic starters such as Beef Tartare and a carefully curated Cheese & Charcuterie Board, as well as craveable entrées such as the signature New York Steak Tasting – which will feature a flight of 5 oz steaks to allow guests to taste the distinctions between grass-fed, grain-fed, and cattle raised by various ranch partners – or the Farm Burger served on Urban Farmer’s famous h Additionally, the menu has an array of seafood selections and vegetarian-friendly meals, such as a Whole Roasted Mushroom with preserved lemon curry, couscous tabouli, and black garlic molasses.

Additionally, guests may indulge in trademark sides and sweets, such as the Twice Baked Fingerling Potato Tart, Baked Mac & Cheese, Roasted Local Mushrooms, house-made Cornbread, and the popular Butterscotch Sundae. To complement the food, the restaurant features an extensive wine and cocktail list, as well as draft and bottled beer.

A CITY ATMOSPHERE

Urban Farmer’s style and décor are anything but typical steakhouses. When feasible, interiors will be obtained locally and will celebrate the Middle Tennessee area with creative materials and details such as live-edged tables and a modern art program featuring diverse, local artists. The warm, easygoing but elegant ambiance adapts to visitors’ needs, whether they’re celebrating a special event, looking for a weeknight place for family supper, or meeting for lunch to talk business. The restaurant, which will accommodate 165 people, will provide inside dining, including a 15-seat bar and high-top bar area seating, as well as patio seating and two private dining rooms that can be joined to create a bigger space. To add to the restaurant’s pleasant ambiance, the front will include a movable wall that will provide an indoor/outdoor open-air experience. Rather than white linen tablecloths, Urban Farmer Nashville will top tables with natural, sustainable elements, such as coconut wax candles rather than paraffin wax, as part of the brand’s commitment to sustainability.

COMMON VALUES

Urban Farmer is devoted to instilling a sense of community and care on every plate, as well as to sustainability and zero-waste efforts. Each restaurant has found a unique way to bring a passion for the culinary ecosystem to life – from rooftop beekeeping, urban gardening, and on-site mushroom terrariums to the distribution of seed packets made with local wildflowers that attract bees capable of pollinating and supporting the local ecosystem. The restaurants’ compost to keep garbage out of landfills, select recyclable and biodegradable take-out containers, never use single-use plastics, and employ aquaponics and hydroponics to cultivate lettuce and herbs for use on menus and in cocktail programs. Additionally, Urban Farmer teams are continuously searching for innovative methods to reduce waste — for example, repurposing kitchen leftovers like dried mushrooms from the terrarium, leftover apple juice from apple cobblers in the winter, and more – in the cocktail program.

The restaurant’s teaching kitchens are intended to develop and cross-train talent by providing educational opportunities such as sommelier certification and instruction in sustainable projects such as beekeeping, composting, and gardening. The innovation culture requires employees to think creatively about new ways to bring shared values to life, and projects grow with each new restaurant as local teams invent, dream, and collaborate to encourage continuing passion. Additionally, as a member of Sage Restaurant Concepts (SRC), the restaurant supports the Hungry to Help initiative, which has collected more than $250K for partner organizations like Share Our Strength, CORE, World Central Kitchen, and Feeding America since its inception in 2016.
