If our readers’ favorite stories reflect current food trends, they love:

  • Easy ways to sneak in more fruits and veggies.
  • Five-ingredient meals that can be thrown together quickly as schedules resume.
  • TikTok recipes: yum! Baking feta pasta, charcuterie wraps, baked oats, mashed Brussels sprouts… need we go on?

The latest TikTok food trend combines all of that. And TikTok user and food blogger Janelle Rohner’s two videos have racked up over 9.4 million (!) views.

Rohner stuffs two mustard-topped turkey burgers and spinach leaves between two green bell pepper halves, removing the stem, seeds, and ribs. Squeeze the veggie bun and it’s about the size of a hamburger bun. But the idea of Low-Carb Burger has us daydreaming about tasty burger combos for grilling season. Turkey burgers with honey mustard, salsa-black beans, mushroom-Swiss, or jalapeo popper sauce on a bell pepper bun? Please!

Let’s do the math:

  • 1 typical supermarket hamburger bun: 150 calories, 2 g fat, 4 g protein, 28 g carbs, 290 mg sodium
  • 1 large green bell pepper: 33 calories, < ½ g fat, 1 ½g protein, 8 g carbs, 50 mg sodium, plus 219% of your daily vitamin C

The low-carb, low-sodium option that packs a powerful punch of vitamin C is the bell pepper. Especially when it’s this good.

“This is great. I mean, I knew it would be good, but “in her video. Don’t like bell peppers but want to reduce carbs? In addition to these tasty low-carb burger bowls, you can also use a different veggie for your “bun,” such as cauliflower or portobello mushrooms.
